A Pink Taco, for sure won't go unnoticed, especially when so many hipsters show up on its pink carpet for the grand opening at trendy Westfield Century City Mall.

. Pink Taco… Really? Yes, really. While Pink Taco sounds like the name of Strawberry Shortcake’s cousin from south of the border or something that would send you on a “bad trip", it is actually the name of the newest eatery at the Westfield Century City Mall.

It’s imposing Pepto-pink exterior walls and fortress-like wooden gate look a bit out of place against the rest of the mall’s gleaming white and silver architecture. However this stark contrast denotes the attitude and atmosphere of Pink Taco.

When you walk in you can’t help but feel a little overwhelmed by the vibrant colors and lighting. A bit of rock and roll rebelliousness and somewhat kitschy but elegant decor mix in a raucous atmosphere while some of the best rock songs play in the background. It all adds up to one thing: fun.

The food is your typical Mexican cuisine with some added flair. Most of the time you can judge how good the food is at a Mexican restaurant by the quality for chips and salsa they bring out at the start of your meal. The chips are light and non-greasy and they serve it with not just one, but two kinds of salsa. How fun is that?

There are standard dishes like quesadillas and tacos but it is their signature Pink Tacos that are a must to try.  While the thought of biting into something called a "pink taco" may not seem appealing, the pickled pink onions add a tasty tang and unique flavor to your meal.

Even better than the food are the drinks, which were served surprisingly as strong as the bright gleaming colors that cascade all around the restaurant. The Pink Taco Margarita is particularly delicious and has a distinct flavor of hibiscus added to it.  Again, good food and good drinks all add up to one thing: fun.

Pink Taco opened successfully on June 28th with celebrity guests like Marlon Wayans, Michelle Rodriguez, and Chelsea Handler with performances by Men Without Sex, DJ Zen, and DJ StoneRokk. And of course Harry Morton, the founder and CEO of Pink Taco Restaurants, was on hand to join in on the festivities and celebrate the opening of his new restaurant.

Pink Taco will be sure to cause quite a stir in Los Angeles by bringing out all the LA hipsters eager to try the latest thing. While there are already tons of taco joints and trendy eateries all over the city, Pink Taco is its own unique experience where people can go and get together with friends for a good time. Just be wary of those Pink Taco Margaritas and make sure you have a designated driver.

Pink Taco is located at the Westfield Century City Mall, Suite 220 1025 Santa Monica Boulevard Los Angeles, CA 90067 on the 2nd level next to the Container Store. Just look for the giant pink building.
